Abstract/Description: The selectivity of the HPLC-MS/MS technique has enabled the determination of a wide range of dyes in complex foods and ingredients, in a single analysis. Considerable suppression of response (“matrix effects”) was observed when analysing such complex extracts so ensuring good quantification and confirmation of identity required considerable care. Our experiences with demonstrating detection of these dyes, their quantification and confirmation of identity will be discussed.
